It’s obtained from the squeezing of precocious olives. It presents an herbaceous fruity flavour, with a nice smell of precocious almond.
It’s a basically sweet oil, with a hint of spicy and a bitter aftertaste. It perfect for “bruschette”, and uncooked on soups, salads, grilled food and red meat.
